Vegan Bridal Shower: Plum Tomato and Watermelon Bites, Fig and Mixed Olive Tapenade, Fennel and Basil Veganaise Dip, Carrot Cake, Mixed Berries with Vanilla Sugar

As the big day approaches for Sarah and Kevin , it is time to begin the celebrations.  

One of the greatest things about an upcoming wedding is the opportunities it affords us to reconnect and catch up with people who have been and important part of Sarah and Kevin's lives.   Last weekend, my mother-in-law,  and Kat hosted a wonderful bridal shower for the future bride.  It was a beautiful event held on a beautiful day.  The theme was a traditional tea party and the ladies wore hats!

We had a great time and the best part was listening to Sarah express how everyone has had an impact on her in some way.  Some stories are from childhood and some more recent but every single person there has mirrored something back to her that she holds in her heart.

We enjoyed wonderful finger sandwiches (always a hit), the best scones every (from The Scone Witch in Ottawa) and a selection of teas.  My contribution was the Vegan part and here is a quick overview of what was prepared.  These recipes are easy and here are some guidelines on how to make them.  Use your tasting ability to combine the ingredients and make them your own and they will be a wonderful hit!

1.  Cut a very thin slice off the bottom of the tomato (to help in sit level) and also from the top stem end.  2.  Scoop out the flesh (with a melon baller) leaving the bottom intact.  3.  Cut the watermelon in small cubes and combine in a small bowl with balsamic vinegar, a little olive oil, fresh chopped basil, salt and pepper to taste.  Add the ingredients in small quantity and taste as you go to determine if you want to add more.  4.  Scoop into the tomatoes and add a drop of balsamic glaze to each just before serving.  Note:  before plating, place the tomatoes on a sheet of paper towel to allow any excess juice to drain.

Blanched Garlic

I t seems that the subject of blanching garlic has come up recently for me several times and I have been recommending what I learned in cooking school for this process, i.e. bringing the peeled cloves to boiling, in water, up to 3 times (cover cloves with water, bring to a boil, strain and repeat 2 more times).  Each time the cloves are boiled, their flavour will mellow. I blanch garlic in order to remove the bitterness and potent bite of it when it is raw.  This is especially useful in recipes like gaspacho, hummus, aioli, as I find the taste of raw garlic tends to overpower the more delicate flavours of the other ingredients. This is really a question of preference and if you like garlic, then by all means, go ahead and use it raw to your hearts content.  For me,  garlic is good but in small doses and I find myself now using blanched or pickled garlic scapes  from Québec (fleur d'ail) more and more in many recipes that call for regular garlic....

One of my fondest food memories is of my mother preparing 10 tourtières at one time in the evening after dinner as she got ready for the upcoming festivities. For French Canadians, this is the time of year when we prepare the Tourtière that will be eaten during the Holidays.

When a family member loves Nutella and it's their birthday and the universe puts a picture of this fabulous recipe on your Pinterest feed,  you really have to go with it!
